What Was/Is For Dinner?

by admin on June 7, 2011

Dinner was super easy for us this evening… so easy hubby trusted me to do it! All by myself!

We had:

• Haddock (took 5 minutes, I smell a future stockpile recipe)
• Green beans from a past CSA bag
• Uncle Ben’s Ready Rice – free with a coupon!

This meal was TRULY from our stockpile!

As a side note, I can really use more Stockpile Recipes. Pictures are always welcome, but not necessary. Please email me!

What did you have for dinner this evening?

We just had a super quick dinner but it was yummy!

Tilapia fillets seasoned with Sazon (this stuff is amazing for seasoning just about anything!) and couscous mixed with avacado and roasted red peppers.

We had a mostly stockpile dinner too..

I had Johnsonville Italian & alfresco garlic chicken sausages in the freezer from past grocery store deals.. boiled them both in a bit of water, then drained & let em get “burn marks” while in another pan I sauted 3/4 onion, yellow & red bell peppers & added a half can of Muir Glen tomato paste (a grocery store freebie) & several large spoonfuls of water from the sausage after they were starting to soften.

I heaped it all on leftover hot dog buns from Memorial Day (some which were free from a local store) and topped them with shredded mozzarella cheese I got free during the $5/5 Kraft coupon last year.
We also had free Lays Potato chips and free Pepsi (he did anyways) that I also got free from Rite Aid several weeks ago.

The only thing I really payed 100% for out of pocket was the onion, and peppers…and maybe the hot dog buns.. The peppers and buns came from Aldi.. so it was super duper cheap.

I put a beef roast in the slow cooker this morning then added potatoes and green beans mid-afternoon. I seasoned everything with a packet of beef stew seasoning mix. Simple and yummy.

We also had a crockpot dinner. I prepped small navy beans last nite and this a.m. I added them in the crockpot w/ chopped vidalia onions, and condiments/molasses/brown sugar and seasoning to make baked beans. I always saute ground beef to add to my baked beans so this was added as well. When I got home, added some bacon. This was served w/ a nice musceli salad w/ raspberry vinegarette and walnuts. As a bonus, we had a very tasty fresh loaf of Italian bread. One of my patients daughter was in Syracuse today and picked up a few loaves, fresh out of the oven… she gave me one!!!! :-)
