As today is a day that many will spend time with their family and friends and off the computer, I decided that if you were kind enough to take the time to stop in at Coupons, Deals and More today, I will try and make it worth your while with the following holiday contest!

Our favorite Dill Vegetable Dip

2/3 cup mayonnaise
2/3 cup sour cream
1 tsp Lawry’s Seasoned Salt
1 tablespoon dried minced onion
1 teaspoon dried parsley flakes
1 tablespoon dried dill weed
1/2 teaspoon Worcestershire sauce

Mix mayonnaise and sour cream. Then add minced onion, parsley flakes, dill weed, Worcestershire sauce and Lawry’s Seasoned Salt. Refrigerate overnight. Makes 1 1/2 cups. (I always double the recipe) Serve with raw vegetables.

Here’s my go to recipe – Cheap and Healthy Shepherd’s Pie! It’s a great way to use up those super cheap potatoes before they go bad!
1 tbsp olive oil
1/2 cup chopped onion
2 cloves garlic, minced
1 tsp herbes de Provence (or Italian Seasoning but the herbes de Provence are worth investing in and go a long way!)
1/2 tsp salt
1 1/2 cup lentils
2 1/2 cups veg stock or water
2 diced tomatoes or one 32 oz can of diced tomatoes from stockpile
6 cups mashed potatoes

Preheat oven to 350. Heat oil in stockpot over medium. Add onions and cook, stirring occasionally, for 1 minute. Add garlic, herbes de provence, and salt and cook for another couple minutes until onions look ready. Add 2 1/2 cups veggie stock or water and lentils, increase heat to high, and boil. Reduce to simmer, cover and cook until lentils are tender and the liquid has been absorbed, 25 to 40 minutes. Stir in tomatoes and transfer to a casserole dish. Top with an even layer of mashed potatoes and bake about 30 minutes until thoroughly heated and potatoes are browned.

I adapted this from a recipe by Rory Freedman and Kim Barnouin and the original recipe is just as yummy but this is the version that always works with what I have on hand. I get requests from friends for this one and depending on how you make your mashed potatoes, it can be under 300 calories for a big serving!

STRAWBERRY SHORTCAKE COOKIES

Mix dry ingredients –by hand–

2 cups quick oats
6 cups flour
2 cups white sugar
4 tablespoons baking powder

Cut in

1 lb. margarine (4 sticks)

Add – mix until moistened only

8 eggs
1 cup orange juice
2 cups sliced strawberries

Bake 350 (convection) – 10-12 minutes

Makes 8 dozen
As you can see – large batch! Recipe from from my old restaurant. You can cut in 1/2 or 1/4 or just freeze for later!

Broccoli Salad

8 slices bacon
2 heads fresh broccoli, chopped
1 1/2 cups sharp Cheddar cheese, shredded 1/2 large red onion, chopped
1/4 cup red wine vinegar
1/8 cup white sugar
2 teaspoons ground black pepper
1 teaspoon salt
2/3 cup mayonnaise
1 teaspoon fresh lemon juice
Directions
Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, and crumble.
In a large bowl, combine broccoli, cheese, bacon and onion.
Prepare the dressing in a small bowl by whisking together the red wine vinegar, sugar, pepper, salt, mayonnaise and lemon juice. Combine dressing with salad. Cover, and refrigerate until ready to serve.

Awesome Chocolate Cake

1/4 c. oil
Chocolate cake mix
2 eggs
1.5 c. water
6 oz. chocolate chips

POur oil in the bottom of a 13 x 9 cake pan. Combine cake mix, eggs, water and chocolate chips until mixed well. Bake 35 minutes at 350 degrees.

Frosting:

1 Box vanilla instant pudding
1/4 c. confectioners sugar
1 c. cold milk

Beat ingredients with a mixer until thoroughly combined. Fold in 8 oz cool whip. Once cake is cooled, frost with frosting. Refrigerate at least 2 hours!

Stockpile & Quickie Get Together Recipes

Ingredients:

Potatoes
Cheese
SOUR CREAM (for the hubby)
Bacon Bits
Butter
Salt & Pepper
Chopped Chives

Bake the potatoes until soft. Slice in half, chop up the potatoes (not the peeling) with a fork. Mix in butter, sour cream, salt and pepper. Sprinkle Cheese, Bacon Bits and Chives on the top.

Dig in!!

One bag of Ruffles Potato Chips
1/2 cup Ranch Salad Dressing
1 tsp. Mayonnaise
1/2 tsp. SOUR CREAM

Mix last 3 ingredients together for a delicious potato chip dip.

Here’s my stockpile recipe: Easy and so good!

BBQ pizza

2 cans of pillsbury biscuit dough, crescent roll dough or one can of pillsbury pizza dough (I always have plenty thanks to their coupons & Kroger’s sales!)

1 jar of BBQ sauce – whatever brand I get for almost free
1 package Perdue chicken shortcuts, Tyson strips, or 3 cooked chicken breasts, cut into strips – again, when these are on sale & I have coupons, I stock up!

1 package shredded pizza cheese. (2 cups) Kroger has these for $1.47 a bag right now, so I have several in the fridge and more in the freezer!

Grease cookie sheet or pizza pan, and pat dough out onto it, forming a pizza crust. Pour 1/2 bottle of sauce onto dough, spread evenly. Toss chicken with remaining sauce, spread over dough. Sprinkle cheese over top, bake at 350 until cooked well and bubbly on top – usually about 20 minutes.

My kids like this version, but you can add red onions or other veggies, really anything you like!!

Here’s my holiday receipe including sour cream for your husband. =0)

I scored about 30 bags of Kraft shredded cheese awhile back for $0.25 a bag — so cheesballs are standard at holidays for awhile.

1 bag shredded cheese

1 box Philly cream cheese

1 packet hidden valley ranch dressing

1/2 cup cream cheese.

Mix and chill for a couple hours. Roll in chopped nuts before serving.

Well, since it is zucchini season and you may be getting tired of it, try this:

Zucchini Pie

2 cups Chopped zucchini
1 cup chopped tomato
1/2 cup chopped onion
1/2 cup Parmesan cheese
1 1/4 cup milk
3/4 cup bisquik
3 eggs
1/2 tsp. salt
1/4 tsp. pepper

Preheat oven to 400, grease pie pan. Sprinkle zucchini, tomato, onion and cheese in plate. With mixer beat other ingredients until smooth. Poor over vegetables. Bake for 35-40 minutes or until knife comes out clean.

Chicken Devan
2 cups coked chopped broccoli
2 cups chopped cooked chicken
1 can cream of mushroom soup
1 cup mayonnaise
1 tsp. curry powder
1 tsp. lemon juice
1/2 cup bread crumbs
2 T. butter, melted
Layer the chicken and broccoli in a 2 qt. baking dish. Mix soup, mayonnaise, and lemon juice together. Spread over chicken. Top with bread crumbs and drizzle butter over top. Bake at 350 degrees for 20-30 minutes or till hot and bubbly and top is slightly browned.

Here is a stockpile recipe for a second entry. I used to double this to serve my family of 6 so it used a lot of sour cream.

Mexican Chicken Casserole

1 8-10 oz carton of sour cream
1 can cream of chicken soup
1 packet of dry taco seasoning
1 cup Rotel tomatoes or any other salsa
1 large package (2 cups) of shredded cheeses
(I personally like the mexican mix or taco cheeses) or cheddar
3-4 flour tortillas
2 cups cooked shredded chicken (great for using left over rotisserie chicken)
(onions, onion flakes, garlic or flakes optional) If using fresh onion or garlic, soften them in a skillet with a little butter or oil a few minutes before adding.

Combine sour cream, cream of chicken soup, taco seasoning, onions and/or garlic if using. Retain about 1/2 cup cheese and add the remainder to the sour cream mix.

Spray the bottom of a casserole with pam or oil lightly…

Tear tortillas in approx 1X 2 inch strips and line the bottom of the dish with them. Add a layer of shredded chicken, spoon 1/2 cup rotel or salsa on top of that.. then add a layer of the sour cream mix over that… and repeat the entire sequence starting wtih the tortillas.

Bake for aprox 25 mins at 350 till bubbly, then sprinkle the remainder of the cheese on top and cook another 10 minutes until its golden and bubbly.

I got the idea for this from when we use to overpay for Schwan’ premade food. It used up some of my stockpile of canned soup, broth, frozen veggies, cheese and rice.

I used cream of chicken soup but mushroom or celery or whatever creamed soup is in your stockpile will work and whatever veggies you happen to have. You can replace some of the milk with sour cream in the recipe for a richer taste.
Not only can you use up stockpile but it goes in the crockpot to cook.

Stockpile recipe:

To go to fast picnic salad

2 Cans garbanzo beans (or beans of your choice we prefer the garbanzo)
1 medium onion diced fine
2-3 Stalks celery diced
1/4 tsp garlic powder
pepper to taste
1/2 c sour cream
1/2 mayo
1/2 parsley flakes

Drain and rinse the canned garbanzo beans, set aside in a bowl. To the beans add the diced onion, celery and seasonings. Combine and mix well the sour cream and mayo and pour over the seasoned beans in the bowl. Mix well and chill for about 1 hr prior to serving.

*There are a tons of variations to this recipe, whether it be a change of beans or subbing the mayo w/ ranch etc. Adding or substracting veggies as well. Very basic, but very, very good. When we take it to a picnic/potluck, I never bring any home, lol

stockpile recipe:
mexican casserole
-cut 2 chicken breasts into bite size pieces and bake with a packet of taco or burrito mix
-when the chicken is cooked through-add 2 cups of black beans (drained)
-make 2 packets of mahatma saffron rice (i use chicken broth instead of water-yum)
throw that in the chicken mix-also add one whole jar of salsa and whatever cheese you have on hand (i like the mexican mix) stir it all together-top with some more shredded cheese and bake at 350 for 30 minutes-YUM!

One bag frozen hashbrowns
one small can cheddar cheese soup
one small container of sour cream

Brown hashbrowns
Once hashbrowns are brown, combine the remaining ingredients with the hashbrowns. Serve.

This stockpile “recipe” is so easy it feels like cheating….
One of the many boxes of pasta (penne is my preferred)
One of the many jars of spaghetti sauce.
EITHER your free Premio Italian sausage (removed from casing and browned) OR chicken (fresh cooked) OR that inexpensive bag of nuggets/tenders
One of the many pkgs of shredded mozorella.

Layer in a large casserole dish. Make sure there’s spaghetti sauce and cheese in the middle and on top.

Bake whatever…. 350 for 30 minutes or so!

Obviously, you can change this up many different ways :)

Hamburger can be heaven casserole

1lb ground beef
onion
box of uncle ben’s long grain & wild rice (use the seasoning pack too)
cup of white rice
2 cans cream of mushroom
1 can chicken with rice
soup can of water
canned mushrooms (do not drain)

brown beef and chopped onion, mix in casserole dish with all ingredients except 1/2 can of cream of mushroom soup..u might want to add a little s&p and garlic if you desire, bake at 350 for 30 minutes. pull out of oven and top with remaining 1/2 can of cram of mushroom soup and return to over for another 15 minutes….yummyyyyyyyyyyyyy

Here’s my stockpile recipe, which is also the recipe I am making for the 4th of July party today. I always have lots of apples from all the NBPR produce rebates and I am lucky enough to have a cherry tree in my backyard so I have tons of cherries.

CHERRY APPLE CRISP

3 lg. tart apples, sliced
1 (12 oz.) can sour pitted cherries, drained
1 c. unsifted flour
3/4 c. firmly packed brown sugar
1 tsp. ground cinnamon
1/8 tsp. ground nutmeg
1/2 c. butter

Combine apples and cherries. Arrange in greased 2-quart shallow baking dish. In a bowl combine flour, sugar, cinnamon, and nutmeg. Cut in butter using pastry blender or 2 knives. Sprinkle over fruit. Bake in 375 degree oven for 30-35 minutes until apples are tender. Serve with whipped cream.

You could have a stockpile of eggs. If you’ve stockpiled the Walgreens RR’s, it’s a lousy week to redeem them. BUT…eggs are $.99, so stockpile them if you’re willing to make egg salad. Boil, cool, peel, chop, toss w mayo/mustard/ranch dressing/dill/ s&p/celery etc. in any combo. No special recipe required.

It’s basil season! Pesto recipe for stocking up in that freezer! Strangely, my 1.5 year old will only eat pasta with gobs and gobs of pesto sauce and not any red sauce whatsoever, so thankfully we had a lot of basil plants last season that has gotten us through to this one.

Pesto! Super easy!
in a blender combine lots and lots of basil, olive oil, and parmesan cheese.

Chop in the blender until smooth. Add pine nuts if you want to mix them in but you can always add them later. pour pesto into lots of freezer safe containers and freeze for later use. when you go to thaw the pesto take out the day before and put in the fridge or transfer to a microwave safe container (not plastic!) and microwave for 5-7 minutes, add pasta and done! :-)

Actually, I was just getting ready to make this recipe from what I have in my cabinets and fridge:

Broccoli bacon salad:

* 1 clove garlic, minced
* 1/4 cup low-fat mayonnaise
* 1/4 cup reduced-fat sour cream
* 2 teaspoons cider vinegar
* 1 teaspoon sugar
* 4 cups finely chopped broccoli crowns
* 1 8-ounce can sliced water chestnuts, rinsed and chopped (optional) some people use sunflower seeds or something else crunchy instead
* 3 slices cooked bacon, crumbled
* 3 tablespoons dried cranberries
* Freshly ground pepper , to taste

1. Whisk garlic, mayonnaise, sour cream, vinegar and sugar in a large bowl. Add broccoli, water chestnuts, bacon, cranberries and pepper; stir to coat with the dressing.

Stockpile recipe:

I like to make chicken alfredo or chicken pesto pizza, using refrigerated pizza dough, pre-cooked until just lightly browned. Spread very lightly with either jarred alfredo sauce or pesto. Microwave Tyson’s grilled chicken breast strips, or use other pre-cooked chicken. Cut into bite size pieces and sprinkle over pizza. Cover with grated cheese-mozarella, Italian blend, whichever I have on hand. Bake about 10 minutes until the cheese is melted and everything is hot.

Tuna Noodle Casserole

about 4 1/2 cups of cooked eggnoodles
2 cans of tuna drained
2 cans of any cream soup (I use cream of celery cuz the kids don’t like the chunks of mushrooms)
-I saute onions, add to the above with worcestershire sauce and pepper and some milk to make it smooth
-pour into large oven safe dish
- make toast…butter and cut into cubes to go on top….my mom used leftover potato chips crumbled.
- bake 350 till its bubbly and heated thru… probably 45 min?

Taco Pie:

Brown 1lb ground beef w/ 1 packet of taco seasoning.

Put in bottom of casserole dish

Cover w/ :
1 can corn
1 c cooked rice
1 C shredded cheddar

Bake for 30 minutes

Hubby can top his portion w/ sour cream ;)

This is my go-to for a salad topper:

EASY 3 bean salad:

2 cans green beans
1 can kidney beans
1 can garbanzo beans
1/2 cup sugar
1/2 cup oil
1/2 cup vinegar

Combine and let sit overnight or just eat it, whatever, it all tastes good!!

Here is a great marinade for chicken!
1/2 cup sour cream
1/4 cup wine vinegar
2 teaspoons mustard
1/2 teaspoon celery salt
1/4 teaspoon lemon juice
dash ground black pepper
Preparation:
Combine lemon juice, mustard and black pepper. Brush over chicken. In a small bowl combine sour cream, wine vinegar and celery salt. Pour marinade over chicken. Cover and place in refrigerator for 6-8 hours. Grill or bake.

Here is my favorite simple stockpile recipe. Basil grows like a weed in my garden…literally!

Basil Cream cheese

16 oz. Cream cheese
2-3 Tbs milk
a handful of Basil (finely chopped)
salt and pepper

Mix cream cheese and milk until smooth. and basil, salt, and pepper and mix again. Eat immediately or let it sit in the fridge overnight for a more intense basil flavor. Enjoy with veggies, crackers, or anything else that sounds good.

My favorite is cucumbers.

Baked Potato Soup
Yield 10 servings.

Ingredients
4 large baking potatoes (about 2-3/4 pounds)
2/3 cup butter
2/3 cup all-purpose flour
3/4 teaspoon salt
1/4 teaspoon white pepper
6 cups milk
1 cup (8 ounces) sour cream
1/4 cup thinly sliced green onions
10 bacon strips, cooked and crumbled
1 cup (4 ounces) shredded cheddar cheese

Directions
Bake potatoes at 350° for 65-75 minutes or until tender; cool completely. Peel and cube potatoes. In a large saucepan, melt butter; stir in flour, salt and pepper until smooth. Gradually add milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat; whisk in sour cream. Add potatoes and green onions. Garnish with bacon and cheese.

Sour Cream Coffee Cake
Ingredients
1 cup butter
2 cups white sugar
2 eggs
1 cup sour cream
1/2 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking powder
1/8 teaspoon salt
1/3 cup all-purpose flour
1/2 cup packed brown sugar
2 tablespoons melted butter
1 teaspoon ground cinnamon
Directions
1.Preheat oven to 350 degrees F (175 degrees C). Grease a 9×13 inch baking pan.
2.In a large bowl, cream together 1 cup butter and white sugar until light and fluffy. Beat in the eggs one at a time, then stir in the sour cream and vanilla. Mix in 2 cups flour, baking powder, and salt. Spread 1/2 of batter in the prepared pan.
3.Prepare the filling: In a medium bowl mix 1/3 cup flour, brown sugar, 2 tablespoons melted butter, and cinnamon. Sprinkle cake batter with 1/2 the filling. Spread second half of batter over the filling, and top with remaining filling.
4.Bake 35 to 40 minutes in the preheated oven, or until a toothpick inserted near the center comes out clean.

Stockpile recipe:
Using this one since you requested a sour cream one & it’s berry season!

Fruit Topping:
1/2 c. sour cream
2 T. brown sugar

Mix together. Chill. Serve over fruit. Goes expecially well with blueberries. You can also add some fresh orange rind and/or a bit of whatever fruit juice you have on hand. Recipe multiplies very easily. I often serve as a side to fruit salad. People can add sauce to taste. I also have used the leftovers in fruit smoothies. Very good!!

Tzatziki

1 large cucumber, peeled and seeds removed
6 floz plain greek yogurt
4 floz sour cream
1 small clove garlic, crushed
juice 1/4 lemon (1/2 TBS juice)
1 tsp dill
a little salt

Chop up the cucumber in a food processor. Put into a colander and sprinkle with salt. Allow to drain for 20 minutes. Combine all other ingredients. Mix in the cucumber.

Refrigerate for six hours. Serve with pita bread or as a dip.

We take cooked pizza crust and add fresh onions, brocc., caulf., tomatoes, green peppers, and either sour cream or cream chesse spread on crust. If you find fresh veggie on sale or out of the garden it great.

My favorite easy stockpile recipe is some kind of meat/veggie/biscuit casserole. It’s:

1 or 2 tubes of biscuits
some leftover meat (whatever you like)
1 can cream of chicken soup
1 can cream of mushroom soup
2 bags of frozen mixed vegetables
1/2 cup milk
salt
generous amount of pepper

Mix everything except for the biscuits together in a 9×13 pan. Bake for 30 minutes at 350. Spread the biscuits out over the top and bake another 20 minutes.

Killer Marinade recipe for Red Meat

1 Tb lemon juice
2 Tb brown sugar
1/2 cup water
1 Tb olive oil
2 Tb soy sauce or Teriyaki sauce
Garlic either powder or whole to taste
Pepper to taste

Place all the ingredients and meat into a into a Ziploc bag. I use this for tough pieces of meat or for added flavor. Marinate overnight for best results. Measurements are not exact because I don’t measure my ingredients, I just pour to taste. So experiment and have fun!

I love your site and your contest! Such sweet prizes how could I not enter? Irresistable! Here is my stockplie reciepe for your husband. Debbie’s Cheap Beef Stroganoff. I always have stockpiles of egg noodles. Ground beef from recent bogo at Pathmark. Chop one onion and brown it with the ground beef, be sure to drain off the fat into an old can.With the ground beef back in the pan, add about 1 cup of water And 2 tsp Worchestershire Sauce, some salt and pepper to taste and about 4 tablespoons dried parsely. Boil one package of eggnoodles once you begin the sauce. After the ground beef and spices begin to bubble reduce the heat on your saute pan to low. Slowly fold in the sour creme. DO NOT LET IT BOIL> This will burn the sour creme. Keep pan on it;s lowest setting, and keep stirring with a wooden sppon. Drain off your noodles and top. Serve with grated parmasan cheese. My family loves this! To reheat left overs add about 3/4 cup of water and remember to keep it on low so you dont burn the sour cream. Leftovers taste even better !

Easy Peanut Butter Cookies

1 cup peanut butter
1 egg
1 cup sugar

Mix all ingredients well. Form dough into ~ 1″ balls and place on a greased baking sheet. Press each ball with the tongs of a fork in a criss-cross pattern to flatten them just a bit. Bake at 350 for about 10-12 minutes.

3 Pepper Salad

Ingredients:
1 green,red,yellow pepper
Thousand Island Dressing
Bowtie pasta
chopped onions

Cut everything into small slices
boil pasta
pour on dressing
let chill for 1 hour

Here is my favorite Stockpile Recipe:
(2) Boxes of cereal – any type (I have used everything from Fiber One, to Cinnabon, Cheerios) shaped cereal works better than flakes.
(1) Can of Nuts – peanuts or whatever you want to use.
(2) Bags of white chocolate chips (or use can use white melting dipping chocolate.
Mix the ceral adn nuts in a bowl.
Melt the white chocolate in the microwave – stir every 30 seconds till smooth. Pour into the cereal/nuts bowl, stir in the white chocolate. Spread out onto aluminum covered cookie sheet, sprinkle with salt & let sit till cooled. Break into pieces and enjoy!

Squash Casserole

5 medium squash, sliced
1 small onion, chopped
1 tbs oil
1 cup cheddar cheese
1/2 c. parmesan cheese
1/4 c. sour cream
1 sleeve ritz crackers (crushed)
2 TBS butter
Preheat oven to 350. Heat olive oil in skillet and add squash & onion. Cook until fork tender. Once cooked transfer to a bowl to cool. Once cool, add cheeses & sour cream. Pour into greased casserole dish & top with crackers. Dot with butter. Bake 25 minutes until brown & bubbly.

1 small jar of pace salsa

brown ground beef, drain well, mix in

STOCKPILE RECIPE ENTRY:

Hot Bean Dip

8oz block of cream cheese
8oz SOUR CREAM
2 or 3 cans of beans…
..I use chili, chili beans, and black
beans…whatever you have in your stockpile…

Heat all in a small crockpot until hot!

You can add shredded cheese
and salsa to the crockpot too
if you like or add them to
the top of the dip afterwards.

Makes a good tortilla chip
dip as is or base for a hot nacho plate.

Also, just had some on top of
a baked potato with extra salsa
and SOUR CREAM!!

Jiffy Milk Chocolate Frosting

1 cup of sugar, 3 1-ounce squares unsweetened chocolate, cut in small pieces, 3 tablespoons softened (not melted) butter,
1 6 oz (or 5 oz) can evaporated milk (the small can) poured in a saucepan & heated just to boiling

Add all ingredients to blender and blend about one minute at high speed. Stop and scrape the sides of the blender with a rubber spatula. Blend again at high speed for three minutes until thick, scraping the sides of the blender as necessary.

Pour into a bowl & cool, stirring occasionally until frosting holds it’s shape. In warm weather you may have to refrigerate & stir/watch until the frosting holds it’s shape. Enough to frost the tops of 2 8″ layer cakes.

If you need more frosting make another batch in the same blender.

Do not double the recipe & make as one big batch of frosting as this is too heavy for the blender.

Chicken Sour Cream & Cheese Bake

1 10 & 1/2-ounce can condensed cream of chicken soup, 1/2 cup sour cream, 1 8-ounce jar process cheese spread (cheese whiz or some other), 1/4 cup milk, 2 cups diced leftover or cooked chicken, 3 tablespoons chopped, canned green chilies, 4 cups corn chips

In saucepan heat together soup and cheese spread until blended, gradually stir in milk. Off the heat stir in sour cream until blended. Add cooked chicken and chilies. Return to heat. Cook and stir until bubbly. Crush half of the corn chips, coarsely. Place in a 1 1/2 quart casserole. Pour in the soup mixture. Bake in preheated 350 degree oven for 20 minutes or until hot and bubbly. Remove from oven and top with the remaining uncrushed 2 cups corn chips & return the casserole to the oven for another 5 minutes or so to warm the corn chips. Remove from oven & let stand 5 minutes before serving. Serves 4 or 5.

Here is a really simple tasty (and healthy) recipe. It is really great in the colder months. It is called 5 can soup. You just mix 1 can black beans, 1 can kidney beans (you can really use any two beans you like), and 1 can refried beans (I use fat-free)… plus 1 can chicken broth and 1 can chicken (I have never actually made it w/ the chicken so I make it 4 can soup). You can add a can of corn too if you like. Salt and pepper and that’s it. It’s really good just like that actually. You can use more or less broth if you like, if you use less, it’ll be thicker and my husband thinks it’s great on hot dogs. Hubby can top with sour cream if he likes. :)

Maybe these aren’t other people’s stockpile items, but I’m a little weird. This is one of my favorite meals and it happens to work well on a low carb diet.

1 pound of frozen ground venison (tastes fine with beef, but make sure it’s lean, this is an easy meal and who wants to take time to drain it?)
1 bag frozen french cut green beans (I buy them in large quantities when on sale)
1 jar of Ragu Alfredo Sauce (again, something I stock up on when Tops has those catalina deals and coupons)

Thaw meat a bit in microwave to save some time, then put meat and frozen green beans in large skillet and cook until meat is no longer pink, then add the jar of sauce.

Onion Dip – So Easy

2 Cups Chopped Onions
2 Cups Mayo
2 Cups Shredded Jack Cheese

Mix all together in a 2 Quart Casserole and bake at 350 until the edges start to brown…serve with Stacey’s Pita Chips

Here is my favorite stockpile recipe for summer is this…

THE BEST FRUIT DIP EVER!
What you need:
1 jar marshmellow creme
1 tub cool whip
1/2 package of cream cheese

What to do
let cream cheese warm to room temp
mix mashmellow and cream cheese
fold in cool whip
let sit in fridge for at least 3 hours

serve with strawberries and any other fruit

For My stockpile recipe…

Simple Stockpile Tacos

1 can of Goya Black Beans
2 bags of Success Rice
1 bag of Birdseye Steamfresh Corn
8 Mission Tortillas
Sargento Shredded Cheese ( any flavor)
Wholly Guacamole
Daisy sour cream
salt & pepper

Follow instructions and times on product bags than mix the beans, rice and corn together. Salt and Pepper to taste. Put inside tortillas and Top with Guacamole , cheese and Sour cream.

You can use any brands but these are what I have gotten for free or next to nothing and have a large stockpile of.

Whenever we run out of tortillas than i still mix all of the ingredients together and top with the sour cream, guacamole and cheese and enjoy on a plate. It is so simple, quick and cheap even without coupons.

Stockpile recipe – Easy nacho dip

1 container of sour cream
1 package of dry taco seasoning

mis together and keep chilled. You can add
shredded cheesed if you want. Dip your nacho
chips in and enjoy.

This is an old favorite of my family!
5 Cup salad
1 cup mini marshmallows
1 cup sour cream
1 cup(small can) mandarin oranges
1 cup chunk pineapple
1 cup sour cream
Mix well and let set preferably overnight. Flavors mix and the marshmallows kind of melt. I usually double the recipe.

Here’s one with sour cream, just for the hubby!

1 can evaporated milk
1 packet betty crocker pouch potatoes
1 chicken boullion cube
1 cup water
5-6 slices cooked bacon
1/2 cup chives
sour cream to taste
cheese to taste

Cook the chives in a pot on the stove until soft, then ad bacon and saute a few minutes more. Add the water, boullion and potatoes and cook until heated though. Remove from heat and stir in evaporated milk. Serve immediately and top with cheese and sour cream, to taste.

So simple stockpile recipe for Fajita Dip – sooo good.
Just mix Fajita Seasoning in sour cream to taste add tortilla chips and you have a great treat!

Today, I made one of my favorite stockpile recipes.

Fried Rice
2 cups (ish) chicken meat (or beef, pork, tofu, etc)
4 cups leftover cooked rice (I used cooked brown/black/wild blend)
4+ cups veggies (I used broccoli, green beans and sugar snap pea stir fry blend–good way to use up little bits of bags)
3 eggs
garlic, shallots, onions, and/or green onions
sesame or other oil for frying
Chinese 5 spice, about 2 tsp http://en.wikipedia.org/wiki/Five-spice_powder
black pepper
cayenne and/or Sri Racha sauce
ginger, fresh and grated or
liquid amino acids or soy sauce, to taste
sesame seeds

Cook aromatics in a wok (or large skillet) in frying oil til tender. Beat eggs and drop into pan, cooking quickly. Set to side of pan or remove from pan. Add in veggies and chicken to heat through. Add in rice and cook quickly on high so it doesn’t turn mushy. Spice to taste. Put sesames and extra green onions on top, if desired.

I love homemade fried rice. So much healthier and a great way to use up leftovers. I used the rest of my leftover chicken and veggies to make chicken pot pie filling. Two in one! I ate a portion of the fried rice and then put the rest in containers in the freezer for future meals.

I know this is a simple recipe, but it’s good for you and contains all the food groups and lots of healthy herbs. I hope this helps someone. Thanks again for the chances, Ann!

I use all of my canned and frozen vegis and and make taco soup and then freeze it!

Hamburger
frozen Corn
Canned Tomatoes
Kidney Beans
Taco Seasoning

Throw it together and either serve or freeze it!

So easy and quick

I don’t know what to call it, but here’s an easy dessert:
Graham Crackers
Apple Sauce
Whipped Topping (optional)
Crush graham crackers to crumbs and layer in a pan with spoonfulls of applesauce. Let chill overnight. Top with whipped cream if desired. Noone will guess it is so easy and simple!

Baked pasta (any kind)

1 pound ground beef (any leftover meat)
1 (26-ounce) jar spaghetti sauce (any tomato sauce/pasta)
1 pound pasta
2 cups shredded cheese (any kind), divided

Preheat oven to 350 F. In large skillet, cook ground beef until brown. Mix spaghetti sauce into skillet. Reduce heat and simmer. Meanwhile, bring a large pot of lightly salted water to a boil. Mix in pasta and cook until al dente . Drain. Mix together spaghetti and meat mixture. Stir in 1 cup of cheese. Pour into 9 x 13-inch pan. Top with the remaining cheese and bake for 30 minutes.

My favorite stockpile recipe is Garlic chicken pasta.
Season 1lb chicken breast with salt, pepper and garlic powder. Cut into 1 inch strips and saute in olive oil until cooked through. While sauteing pasta, boil pot of water to cook 1 box rotini until just al dente. Mix chicken, pasta and 1 jar marinara in a dutch oven or other pot you can place in oven. Top chicken pasta with Mozzerella cheese and bake at 350 degrees until cheese is bubbly. So easy and so yummy!

BTW- I count Mozzerella as part of my stockpile since a friend told me you can freeze the bagged, shredded mozz. I have about 10 bags on hand at a time now!

we all have cake mix stockpiles!

1 box yellow cake mix
1 cup orange juice
4 eggs
1 cup vegetable oil

Mix all ingredients well and pour into a cake pan. Bake at 350 degrees for 20-25 minutes. Allow to cool and frost with white or cream cheese frosting. THis cake is always a big hit!

another way to make this is in a bundt pan with glaze:

GLAZE:
1 stick margarine
1/2 cup orange juice
1 cup sugar

Prepare glaze 5 minutes before cake is done. Mix all the glaze ingredients over heat until the mixture boils.

Remove the cake from the oven and pour the glaze on top (while the cake’s still in the pan). Let stand for 15 minutes then turn over out of the bundt pan
