Stockpile Recipes – Easy Chicken
I love chicken. I find it easy to cook with and extremely versatile. We frequently have stockpile chicken recipes that are more idea than an actual recipes, so let me give you a few examples:
Nearly every time we make chicken we make rice to go with it. A Lipton Knorr Rice based pouch works too. For a vegetable I always seem to gravitate to a green vege with chicken. I have no idea why. Maybe because I always have a giant stockpile of steamfresh peas and broccoli?
For a marinade I use salad dressing, usually an oil base. The new bountifuls are a much better marinade than salad dressing IMO. When you marinade the chicken you can either bake it in the oven afterward, or grill it.
For some reason, I cut up my chicken and throw it in a 9″x13″ pan with BBQ sauce. I bake at 350º for 45 minutes and I am done. I seldom BBQ chicken on the grill.
One of my very favorite chicken stockpile recipes involved onion soup mix. Way back when Lipton onion soup mix was free every other week. Not so much anymore, but I still manage to have recipe soup mix in the cupboard. I have no idea where I got this recipe as I’ve been making it for over 20 years:
Chicken w/Onion Soup Mix
Preheat oven to 350º
2# cut up chicken
1 (16oz) carton sour cream
2 cans condensed cream of chicken soup (you can substitute cream of mushroom for a slightly different taste)
Milk
1 envelope Lipton onion soup mix (I use 1 1/2)
Place cut up chicken 13″ x 9″ pan.
In separate bowl combine 1 carton sour cream, Lipton soup mix, 2 cans cream of chicken soup. Fill each empty soup can between 3/4 – full and add to mixture. (the more milk, the more fluid the mixture)
Pour mixture into 13″x 9″ pan covering chicken.
Bake on 350º 1 hour or until mixture is bubbling and slightly brown at the pan edges.
The onion soup mixture makes a wonderful “gravy” for over rice or potatoes. Like many recipes this one is even better the second day as leftovers!

Wow! Great ideas and the recipe looks very frugal. I have a similar one that uses sour cream, cream of chicken, mayo, and lemon juice. I sprinkle cubed up bread and cheddar on top.
Sounds yummy! I love to cook with chicken too.
