I know farmers cheese is dry cottage cheese so while that would probably work if you left a bit of liquid from the cans, it isn&#039;t going to help you much... unless it is the texture you dislike about cottage cheese?  Farmers cheese had a different texture.  But, farmers cheese is not cheap and seldom free.  If you are unfamiliar with farmers cheese, it is the cheese used in pierogi.  

I love ricotta too, but I&#039;d think it would be really sweet if you used it as a substitute.  It may also be too heavy (or dense as you suggested) for these recipes.  The cottage cheese is a lot lighter.

If you try it, plmk how it worked out and how it tasted.  I could eat ricotta plain so I&#039;m up for anything it can be used in!
