Stockpile Recipe(s) – Cool Whip

So this week I decided to veer from main menu to a side dish. With picnics and lighter-fare summer eating, combined with the plethora of Kraft coupons, I decided to explore the wonders of cool whip.

I make a lot of different items with cool whip. I personally use the lite with all recipes because I prefer the taste. If you like the fat-free or the fully-loaded, they are very easy to substitute.

The first recipe I will share I don’t have a name for. It is another recipe that I have been making for over 20 years and I have no idea of the origin.

Pineapple Cool Whip

1 container Cool Whip, thawed (8oz)
1 box Jell-o (I use sugar free)
1 can (20oz) pineapple, well drained
1 container (16oz) cottage cheese (I use low fat)

Pour jello into medium bowl.
All the well-drained pineapple. Mix well.
Add the cottage cheese. Mix well.
Fold in the cool whip.

Chill for several hours until serving.

That is it. Easy and light recipe that adds to any summer-time fare.

My mother gave me the next recipe

Mandarin Orange

2 cans (11oz each) Mandarin Oranges
1 package vanilla instant pudding
1 pound small curd cottage cheese
1 container Cool Whip, thawed (8oz)

Drain each can of Mandarin oranges separately, reserving the juice from one can.

In large bowl, pour pudding mix and add the juice from one can of Mandarin oranges. Mix well.
Add cottage cheese. Mix well.
Add cool whip. Mix well.

Cut one can of Mandarin oranges into sections (thirds will do nicely).
Gently fold pieces into mixture.

Place mixture into serving bowl. Decorate with whole sections of ornages from the drained second can of oranges.
Refrigerate until serving.

No idea where I got this next recipe. It is also an oldie from 20+ years ago too.

Combo Salad

1 container Cool Whip, thawed (8oz)
12 oz small curd cottage cheese
1 package lemon Jell-o (I use sugar free)
1 can (20oz) pineapple, well drained
2 cans (11oz each) Mandarin Oranges, well drained
1-1 1/2 cup miniature marshmallow

Mix lemon Jell-o with cottage cheese.
Add Mandarin Oranges and pineapple. Mix well.
Fold in Cool Whip.
Fold in marshmallows.
Refrigerate overnight.

  1. Is there anyone out there who can suggest a substitition for the cottage cheese in the above recipes? I can’t stand cottage cheese but I LOVE ricotta (go figure) can I sub ricotta os is that too dense?

  2. I don’t know, Barbee. I know farmers cheese is dry cottage cheese so while that would probably work if you left a bit of liquid from the cans, it isn’t going to help you much… unless it is the texture you dislike about cottage cheese? Farmers cheese had a different texture. But, farmers cheese is not cheap and seldom free. If you are unfamiliar with farmers cheese, it is the cheese used in pierogi.

    I love ricotta too, but I’d think it would be really sweet if you used it as a substitute. It may also be too heavy (or dense as you suggested) for these recipes. The cottage cheese is a lot lighter.

    If you try it, plmk how it worked out and how it tasted. I could eat ricotta plain so I’m up for anything it can be used in!

  5. I make something similar to the pineapple one, only I use strawberry jello and fresh strawberries–it’s wonderful!
