Stockpile Recipe: Taco Casserole

Several weeks ago, I had asked for help with Stockpile Recipes. Several of you were good enough to email me stockpile recipes, and I always welcome more.

This recipe is courtesy of Patty

Taco Casserole

2 cups uncooked elbow maccaroni
1 lb ground beef
1/2-1 package taco seasoning
1 (15 oz) can of tomato sauce
1 (15 ox) can of kidney bean (I omit this at my hubby’s request)
1/4 cup milk
2/ 1/2 cup cheddar cheese
1 small can french-fried onions
1 cup lettuce
1 tomato diced
2-3 taco shells

Preheat oven to 375.
Brown beef. Add seasoning, tomato sauce and beans. Simmer uncovered.

Cook maccaroni and drain. Add milk and two cups of cheese. Stir.

Grease casserole. Layer 1/2 maccaroni mixture and then 1/2 meat. Add 1/2 cup of onions. Add another layer of the remaning maccaroni mixture. Then add remaining onions. Finish with layer of meat.

Bake uncovered 25-30 minutes or until hot.
Top with lettuce, tomato, and cheese.

ann – change the title to taco and i think more people would be interested! looks good – i will try this, with extra tomato since i am just about buried right now!

haha – I almost did not look – not interested in tuna either… but then I thought,” Ann is so awesome she probably does something different and maybe it will be better”…. Sure enough, she makes it taste like taco salad!! :)

I was interested in using tuna- when I saw the ground beef, I was intrigued!

Okay, so I don’t like “Mexican anything”… seriously, I have no idea why, it’s like an “instant gag” w/ me…. however, that being said I have to compromise cuz familia loves it…

Hi Didi – im in the same boat, my familia would eat tacos daily and I do NOT agree…. but this sounds worth a shot!! the title did say Tuna Cass. so had to comment on that – :)

I am not seeing the taco shells used in the recipe. Am I missing it or is it not there? I am thinking you crunch them up and throw on top with the other toppings?

I’ve been away from home, so I had not been able to comment on this. “Tuna casserole” — Funny! :) My dear hubby hates tuna casserole, and although he also doesn’t like overly spicy foods, he does like this recipe.
