Several weeks ago, I had asked for help with Stockpile Recipes. I am running low on ideas, and quite frankly, wouldn’t mind trying some new recipes from the stockpile myself!
Several of you were good enough to email me stockpile recipes, and I will be posting those over the next few weeks (I can always use more if anyone wants to send!)
This week, Rhonda is kind enough to share her Spiced Rim Cake recipe with us! Thank you Rhonda!
Spiced Rum Cake
Cake
1- Golden Butter Recipe Cake Mix (Duncan Hines)
1- ¾ oz Instant Vanilla Pudding Mix
4 – Whole Eggs
½ cup Vegetable Oil
½ cup Water
½ cup Captain Morgan’s Spiced Rum
• Spray a Bundt Cake Pan with Pam, and preheat oven to 350º.
• Mix all the Ingredients with a mixer for 2 minutes.
• Pour cake mix into bundt pan and bake for 50 to 60 minutes. (Some ovens cook at hotter temperatures, you might have to play around with this).
• Once it is done, pull out and set aside while making the glaze.
Glaze
1 – Stick Butter
¼ cup water
¼ cup Captain Morgan’s Spiced Rum
1 cup sugar
• Bring butter, sugar and water and rum to a boil in a small sauce pan. Cook for 2 minutes, continually stirring mixture to help the sugar and butter dissolve. Make sure this doesn’t boil over, it is very sticky and such a pain to clean up.
• While the cake is still in the bundt pan, pour glaze over the cake (which will be the bottom) and let set.
• Give the mixture a chance to absorb in the cake and then turn bundt cake pan upside down on a cake plate. (Secret is to not let this cake cool completely, as it will stick to the pan). Hint: I usually place a towel- doubled up on my counter with a piece of wax paper and slam the cake down with a little force. Then transfer the cake while on the wax paper to a serving plate or cake storage container, so I don’t have to slam onto a nice plate and risk breaking it.
This cake is easy once you get the hang of it and is so moist. It even gets better a few days later, if you are lucky to still have any around. I usually make this around the holidays for friends instead of cookies and have people get upset if they have been taken off the list… LOL… But certainly can be enjoyed year round. ENJOY!
