This is a cheater week for me. I did not cook a thing last week. Hubby was OOT and Sonny-boy cooked all this own meals. He decided three weeks ago he needed to lose some weight, so he gave up drinking and decided to only eat skinless chicken, seafood and vegetables. He lost almost 25 pounds in three weeks. I don’t know whether I am amazed or appalled that someone could consume enough alcohol calories on weekends that when they quit the binging the weight would just come off. Oh, and he went back to jogging an hour a day too (no way, no how).
So, because I didn’t cook last week I had to go back to the ole recipe box for an something to post. This recipe is 25 years old and I’m not sure who gave it to me. It was written on one of my shower cards, so it is actually more than 25 years old. I always have the ingredients on hand. Quick, easy, no muss, no fuss.

Snickerdoodle Coffee Cake
400º preheated oven
9″ square pan, greased and floured
1 c flour
1 c sugar
1 tsp baking soda
1/2 tsp salt
1 Tsbp ground cinnamon
1/2 c milk
1/4 c melted butter
1 egg
Mix together all ingredients either using low mixmaster setting or by hand
Pour into 9″ greased and floured pan
Sprinkle top heavily with sugar. This will form a crust while baking.
Bake 30 minutes at 400º, test for done.
Serve warm.

I was just wondering about the double salt entry? it calls for 1/2 teaspoon and 1 tablespoon of salt? is this correct?
Sorry about that Lori. I started to type the cinnamon, got distracted and started that line again. *head bang*
It is 1/2 tsp of salt.
