Stockpile Recipe – Skillet Cookies

Well I cannot say I didn’t cook last week, I just cooked very little.

Since we had leftovers from Stockpile Recipe- Labor Day, I did not cook until Wednesday. I made a giant pot of chili whose recipe I could not duplicate if you paid me. Too bad too, ’cause it was one of my better batches. I used up a lot of the CSA veges we had been stockpiling, and a buncha chili powder and canned tomato products that have been in the racks down the basement for a while now (pictures here) so it was a GREAT stockpile recipe… if there had been an actual recipe that is.

I also made peach cobbler but we absolutely hated the cakey part, so I’m going to experiment this week with different toppings for the delicious bottom and if I find a winner I’ll post that next week.

I do know that the first week in October I’ll be posting a lot of apple recipes in honor of apple season here in New York State.

Soooo that leaves me with nuthin’ for this week, so it was off to the old recipe box for another old-timer recipe – AKA recipes from my wedding shower 25+ years ago (first marriage). :-)

These are called Skillet Cookies. The lady that gave me this recipe was our next door neighbor when I was growing up, and she passed away approximately 20 years ago. I have no idea where she came up with the recipe, although I suspect with the Rice Krispies® ingredient Kellogg’s must have published it originally. That is only a guess.

Skillet Cookies

1/4 pound butter
3/4 cup sugar
1 beaten egg
1/2 pound chopped dates (I leave these out as a personal taste preference)
1 cup chopped nuts
3 cups Rice Krispies®
1 tsp vanilla
confectionery sugar

• Over low heat melt butter
• Combine sugar, eggs and dates, add to melted butter and cook over low heat stirring 10 minutes and mixing with a wooden spoon
• Remove from heat
• Add nuts, Rice Krispies® and vanilla
• Cool
• Roll into small balls (or any shape you like) and roll in confectionery sugar

Your cookies are a favorite in my family. My mother and grandmother used to make those at the holidays — we call them Stovetop Cookies. They’re excellent!

My grandmother used to make these (with the dates… can’t imagine without) and she called them “humdingers” She passed away and I never got the recipe from her, but I can’t wait to try these… sounds just like them! Merry Christmas
