Stockpile Recipe: Pumpkin Spice Cupcakes

Several weeks ago, I had asked for help with Stockpile Recipes. I am running low on ideas, and quite frankly, wouldn’t mind trying some new recipes from the stockpile myself!

Several of you were good enough to email me stockpile recipes, and I will be posting those over the next few weeks (I can always use more if anyone wants to send!)

This recipe is courtesy of Katie who writes:

This is my new fave stockpile recipe, and it’s super easy.

Pumpkin Spice Cupcakes

• 1 package spice cake mix… OR 1 package yellow cake mix + 2 tsp pumpkin pie spice
• 1 can of pumpkin puree

• Mix and put thick batter into 12 cupcake liners.
• Bake 23-25 minutes at 375º
• Cool and frost (cream cheese or vanilla frosting are good choices)

They taste better the day after you make them, and are really moist!

Do you follow the directions on the cake mix, or just “mix” the cake mix and pumpkin puree? I’m confused and mixed.

Just the pumpkin is all you need :)

Yes, you just mix the pumpkin (15 oz. can) and the cake mix (regular size box). No other ingredients necessary! I know it sounds crazy but it works!

what size pumpkin?

I have a son who is allergic to eggs and muffins are hard to come by. This will be great.
