Stockpile Recipe: Pork Tamale Pot Pie

Hubby handed me a recipe the other day and asked me to make it. At first, I put him off because I did not think we had the ingredients. We actually DID have everything on-hand, the only problem was hubby had put the spices away last so could not find half of the items needed. *sigh*

So, the next day I tried again only to discover he had lost page two with the cooking directions. My attempts to find the original recipe online failed.

At that point I decided to start substituting things, and came up with the concoction below which is based on the recipe he found at food.com that I was unable to locate. I found other recipes with the same name, but not the same recipe below.

Pork Tamale Pot Pie With Cornbread Crust

350º oven

Pork Mixture

1 c diced onions
1 cup diced green pepper
2 TBSP vegetable oil
1 1/2# cooked, leftover pork roast (we used seasoned pork we had from something he made last summer)
6oz tomato paste
12 oz tomato sauce
1 can corn
1 TBSP cumin
1/2 tsp all spice
2 TBSP chili powder
1 TBSP Worcestershire sauce
1 tsp red hot sauce
1 TBSP yellow corn meal

Topping

1 c flour
1 c cornmeal
3 TBSP sugar
2 tsp baking powder
3/4 c milk
1 large egg slightly beaten
8 oz grated cheddar cheese

Make The Meat Mixture

Heat vegetable oil
add onions, allow to soften
add green peppers and cook 10 minutes
add pork and stir until hot
add tomato sauce, stir
add tomato paste, stir
add drained can of corn, stir
add spices, Worcestershire sauce and red hot sauce, stir
fold in corn meal

Spread at bottom of lightly sprayed 13″x9″ pan

Cornmeal Topping

Combine flour, cornmeal, sugar and baking soda
Add milk to beaten egg

Stir in egg mixture into dry ingredients.
Fold in cheese.

Now drop topping onto pork mixture that is in the 13×9 pan.

Bake on 350º for 35 minutes.

This was good hot but as leftovers it was fantastic!!

YUUMMMMMMEEEEEE!! I love tamalies.. but they are such a chore to make..and something I rarely do.
That tamalie pot pie recipe is easy breezy.. Thanks for sharing it! :D
