Stockpile Recipe: Pineapple Cake From My Mom

My mother gave me this recipe on 8/22/85 – she dated the card!

Pineapple Cake

preheat oven to 350º

2 c flour
2 tsp baking soda
1 2# can crushed pineapple – including the juice (2# can’s do not exist anymore, adjust accordingly)
2 eggs
2 c sugar
1 c chopped nuts

Mix together all ingredients and pour into a 13″ x 9″ pan, baking at 350º for 40-45 minutes.

Frosting

1 stick of butter or margarine
1 8oz cream cheese
1 tsp vanilla
1 1/3 c confectionery sugar

Beat ingredients together well, until fluffy.
Spread on cooled cake

What does 2# mean? What’s the weight?

TB: 2# means a 2 pound can.

I get *typical Greek martyr/guilt*…. “ugh, is this what you do? What pineapple, since when do the Greeks use pineapple”…
*me*; “mom, just try it… ”
*mom*; “ehhhhh it’s ok, you should try this original greek recipe… “.
*me*; shaking head and cringing, “why do I bother”??? :(

Can your mom adopt me???? :)

A #2 can is a 20 oz. can, which is a typical size can of pineapple. I only know this because I was in the restaurant business – they call those giant 3lb. cans #10.

This sounds delish…and I like the idea of dating the recipe cards you give out! I would love to know how long some of the recipes have been around in my family. There is a recipe for rolls that has been in our family for over 100 years! Exactly how long though, who knows?
