For Christmas Eve hubby was fooling around, er diligently researching on food.com looking for a potato soup when he came across this recipe. It was a smash hit! Everyone wanted leftovers, people who do not as a general rule cook wanted the recipe, etc., etc. Rave reviews all around!
Since right now we have 10# of potatoes in the house and I figure I’ll end up with at least 10 more pounds after doing the Tops pot roast deal a few more times, I asked hubby to dig out the recipe so he can make another batch (or two) this week.
Then I got the brilliant idea (ok, it was hubby’s brilliant idea) to post it as my weekly stockpile recipe since it is a great use of potatoes if you have excess.
Panera’s Cream Cheese Potato Soup
4 c chicken broth
4 c peeled and cubed potatoes (if you have yellow potatoes, it makes for a nice color)
1/4 c chopped and minced onions
1/2 tsp season salt
1/4 tsp white pepper
1/4 tsp ground red pepper
1 8oz package of cream cheese
• Combine broth, potatoes, onion and spices in large pot
• Boil on medium heat until potatoes are tender
• Smash potatoes to release heat for thickening (hubby uses his stick blender)
• Reduce to low heat
• Add cream cheese
• Continue to heat, stirring frequently, until cream cheese melts

MMMmmmmmmm!!! I never thought to put cream cheese in potato soup, but it sounds divine. We must be on the same channel because I was just thinking about making potato soup! Even bought some potatoes. Then I found some I already had. Brilliant.
Question: When you say to “smash potatoes to release heat for thickening,” do you mean to make it all one consistency? Or do you (hubby) just smash enough to thicken it up a bit?
Sounds like a great way to use all those potatoes from Tops this week. We can even make extra and freeze some.

I use this recipe with a twist. It makes for an army sided amount but it’s so good it doesn’t last long in the fridge. I mix the cream cheese with flour and then add milk to that (about 4 cups… but my recipe also calls for 5 lbs potatoes and only enough broth to cover the potatoes). It’s rich and creamy and plain divine.

Amber we froze the leftovers and when defrosted it was just as good as when fresh. That might work for your variation too.

This sounds great and sooo easy. I think a lot of your readers will be having this for super tonight, I know we will. I think I will head out to Tops and pick up another roast, while I’m there I mine as well pick up some chicken broth. Then maybe Walmart and pick up some cream cheese, I have 4 coupons 1/1 that are going to expire, this is a great way to use the cream cheese. Thanks Ann
Oh that sounds so good, but I am doing this detox program for 1 month and not allowed any diary (except plain yogurt, huh?), any kind of sugar (including fruit, but green apple is ok), anything with weat, or yeast, etc.. In short it is crazy. Maybe after when I am done with it I will try to make this!
TB, I bet it would be just as good using yogurt as cream cheese.. Oftentimes if I dont have sour cream or cream cheese to use in a recipe, I’ll substitute labna which is a Lebanese/Greek yogurt cheese.
On the other hand.. potatoes are moderately inflammatory so it’d probably be wiser to wait until your detox is over.

But seriously, I have been eating buckweat and vegetables (ok my husband did make chicken sausage and kale soup that was pretty good and I could actually eat it too)for the past several days so anything even half good will taste delicious at this point. One more month to go…
Don’t forget to toss some Shredded Cheddar on top of the soup in your bowl!! OMG YummY!!!
Oh – and hubby even added broccoli to a batch once! Fresh, not frozen, but I am sure both would work!
I’ve added onions, celery and carrots before and it makes for a colorful and delicious soup.

Girl….this looks divine! My husband loves potato soup. It is one of the few things his mom makes better than me. Maybe he will like this one…..and I will rock…haha.
