Stockpile Recipe: Lemon Cake

Several weeks ago, I had asked for help with Stockpile Recipes. I am running low on ideas, and quite frankly, wouldn’t mind trying some new recipes from the stockpile myself!

Several of you were good enough to email me stockpile recipes, and I will be posting those over the next few weeks (I can always use more if anyone wants to send!)

The recipe is from Cathy C:

Lemon Cake

Batter:
1 box yellow cake mix
1 box (3 oz) lemon gelatin
4 eggs
2/3 cup water
2/3 cup canola oil

Glaze:
1 cup confectioners’ sugar
3 tablespoons lemon juice
1 teas grated lemon peel

• Combine batter ingredients, beat on low for 1 minute and high for 2 minutes.
• Pour into a greased and floured 10 inch fluted tube pan.
• Bake at 350º for 38-42 minutes
• Cool until warm and invert cake
• Drizzle glaze over warm cake

Yum.. that’d be worth finding some gluten free cake mixes to make that.. YUMMMY!
Its so odd.. My taste preferences have changed so much since I was a youngster.. Until I hit my 40s I couldnt stand lemon anything.. except the memory of a lemon cookie my mom & I made when I was in kindergarten. :D
