I was ill last week, not deathly, and not the flu, but really out of it for 4-5 days. Since I am not usually the cook in the house anyway, and hubby saw no real need to make anything for someone that wasn’t going to eat what he prepared, I have nothing for a Stockpile Recipe this week. I sure as heck wasn’t baking.

This is what we had for dinner tonight… southwestern-chicken-and-dumpling-corn-chowder
Only slightly modified it. Had a 10 oz can of chicken broth so just used the whole can. Used the broken crumbs from the bottom of a bag of Tostitos instead of the tortilla shells. And no cilantro sprigs.
For the salsa I used half a cup of medium (what was left in the jar) and half a cup of hot.
I will admit, I wasn’t sure how it would turn out, but I LOVED it. It had a little kick to it, so if you don’t like spicy, it won’t be for you. Hubby and I each had two bowls for dinner and there is enough for us each to take a bowl to work for lunch tomorrow.
