Stockpile Recipe: French Onion Soup

Kim H was kind enough to share with us her French Onion Soup recipe. As she said in her email most of the ingredients were bought with coupons, deals & rebates.

Just the kind of Stockpile Recipe we all like!

French Onion Soup

1 stick butter
1 T olive oil
8 large onions-cut in half and thinly sliced
1-2 cups red wine (or white if you prefer)
6 cans (College Inn) beef broth
1 large sprig fresh thyme or (1 teaspoon)
black pepper to taste

• Melt 1 stick of butter in the bottom of a large stew pot and add 1T. olive oil.

• Add thinly sliced onions and reduce the onion volume by about 2/3rds, stirring often. Onions should be caramelized and very very soft & creamy in consistency. (about 45 minutes to one hour)

De-glaze the pan using the wine and let simmer for 4-5 minutes while stirring.

• Add the cans of beef broth and the thyme, & pepper and let simmer for 1-2 hours.. The longer it simmers, the deeper the flavor it has.

• Ladle it up & top with mozzarella or other cheese and croutons.

If you have LOTS and LOTS of onions, they can be cooked/caramelized and frozen for future use.

To do this, pause @ step 2, remove the excess onions for freezing-THEN resume the recipe w/ deglazing, etc. for tonight’s meal.

I love French Onion Soup! Can’t make it at my house though, hubby would divorce me for sure! He hate onions, especially the smell of them. I sneak them in in small doses and he’s ok with that. Once I made French Onion Soup after we were first married and I thought he was going to die, LOL!

Because I live in a dry county, I had to come up with an alternative for the wine. I found that apple juice seams to do the trick. Hope this helps somebody else out that my be looking for a substitute.

I just finished dicing up the potatoes for cheesy crockpot baked potatoe soup for tomorrow. Supposed to be getting the “storm of the century” according to news anchors… so I figured driving will be… yeah, let’s have a nice hot meal waiting for me when I get home!!! I wished I would of seen this post earlier… I have tons of onions and now cheese thanks to TOPS :-)

I’ll have to send you my “non mult-grain” bread maker recipe in the future… we’ve been making this and it’s an amazing no fail bread recipe, recipe!!!!
