Stockpile Recipe: Cinnamon Cake

Last month I asked for help with Stockpile Recipes. I am running low on ideas, and quite frankly, wouldn’t mind trying some new recipes from the stockpile myself!

Several of you were good enough to email me stockpile recipes, but more are always welcome!

Today’s recipe is courtesy of MC

My grandmother made us this cake every week when my brother & I were kids. My girls, as well as my niece & nephew have grown up with this cake as well. While Crisco may not be in everyone’s pantry, it’s a must in mine.

Cinnamon Cake

Makes (3) 9″ round cakes

Pre-heat oven to 350 and grease 3 9″ round pans (disposable pans are fine)

3 cups plus 3 tablespoons flour
1 1/2 cups sugar
12 tablespoons Crisco Shortening
1 1/2 teaspoons Vanilla
3 Eggs
1 1/2 cups Milk
4 1/2 teaspoons Baking Powder
1 1/2 teaspoons Salt

• Cream sugar and Crisco.
• Add in eggs, vanilla and milk beating until mixed.
• Add flour, salt and baking powder and mix until smooth.

Divide batter equally among the 3 pans and then set aside

Topping:

Beat together
1 1/2 cups Sugar
3/4 stick margarine
4 teaspoons Cinnamon

• Sprinkle equal portions on top of each pan of cake batter. It’s ok that you have clumps.

• Bake for 25 minutes or until tester comes out clean.

These cakes freeze very well.

Can I put cinnamon in the batter so the cake is flavored too or do you think that would be too much cinnamon?

The cinnamon topping will bake down into the cake so I wouldn’t add to the batter.

Can you use butter instead of crisco? I have all the other ingredients on hand but the crisco. This sounds very yummy!

I’ve never made the butter substitute so I honestly can’t say if that would work and still have the same taste. It’s certainly worth a try.

MC this sounds amazing thank you so much for sharing!!

I do have a question though. Does this make (3) individual cakes? Or are you combining them at the end somehow and I am just not getting it. They sound almost like a crumb topping coffee cake yes?

This recipe sures brings back memories of baking every Friday during summer vacation with my mom. Everything was from scratch and we did it all from cookies, to pies to cakes.

This sounds so good and really a simple recipe I think I will try Butter Frosting as my hubby will eat it, if it has that kind of frosting easier, lol . Thanks for the recipe I enjoy trying these each week.
