Stockpile Recipe: Beef Brisket

Back in May, Boston Market had a Memorial Day coupon for 50% off a family meal. We always participate in those offers because we feel at 50% off, Boston Market is a good value.

Hubby went in and wanted a chicken and a meatloaf. Well, they were out of the meatloaf so the clerk upsold him on the beef brisket. BEST use of $1.89 EVAH!!

So, hubby decided to try his hand at making beef brisket.

He started with a 10# brisket, and a foil lined jelly roll pan:

He mixed together these ingredients in a bowl:

4 TBSP Liquid Smoke
4 TBSP Soy Sauce
2 tsp Garlic Powder
4 tsp Celery Seeds
2 tsp Ground Pepper
4 tsp Worcestershire Sauce
2 TBSP Lemon Juice
2 tsp Onion Powder
1 tsp Salt

Then he spread the mixture on one side of the brisket, flipped it, and swabbed the second side with the marinade.

After that he folded the ends:

Until the brisket was completely sealed:

Marinated overnight in the refrigerator.
The next day he cooked it for 6 hours at 275º (you could cook it a tad quicker at 300º for 5 hours)
It come out beautifully

And cut like butter!

At this point you can choose to eat the brisket with, or without BBQ Sauce.

I was going to pick up a brisket this week to try in my new toy….my water smoker! Sssshhhh, don’t mention this to your Hubs Ann cuz he might want to buy another kitchen toy.lol

Ann,
You can bet this recipe makes it to my table. Sound delish!

I bet this makes good BBQ beef sandwiches. I have a recipe that is very similar to this and after the beef is cooked I refrig both the sauce and the beef and the next day I shred the beef and put in a crock pot with the juice and it makes awesome beef sandwiches served with deli cheddar cheese. I serve these at my fall fest every year.

I kid you not, I JUST DROOLED!!!! Literally!!!! A dry rub/overnight marinade what have you w/out the added ‘sauces’ is my idea of HEAVEN!!!!

Brisket is amazing.. but if you havent had it smoked with mesquite, you should.. Theres nothing like it in the world, and to this Texan, there is no equal.
That being said.. I have no smoker here and I have no mesquite.. so I make them very similar to your hubbies. YUM! Good eating!!

My hubby smoked a brisket yesterday, it was outstanding. We dry rub it overnight and he smoked it for 7 hrs. I bought him a smoker at Sears 3 yrs. ago, the best money I ever spent. When I get my Foodsaver I got for 75% off I can freeze some if there is any left!

May I ask, what kind did you get Lea Ann? Is it a conventional smoker or one of the electric ones?
Im planning on getting one one of these days but I havent decided which one I want.
We almost bought one of the larger pellet smokers when they had a display at Costco.. I had to bite my fingers and walk out of there fast.. lol It was tough. :) I hate spending a couple grand on a whim and thats what it would have been even though I’ve been wanting a smoker.
I can get an inexpensive one for free from my work’s gift program and I probably should.. but then the thought of having to go out & stoke that fire in the middle of the night dampens my enthusiasm. haha! ;)

Kim,
It is propane and has 4 shelves. We use woodchips in it. Our friend competes in BBQ’s throughout the country, so we learn alot from him. This serves our purpose just fine, if we did compete it would have to be electric or wood. Propane is not allowed in competitions. I paid a little over $100.00 for it 3-4 yrs. ago. I have also seen them on QVC. Friends and family come out of the woodwork when they catch wind hubby is smoking! In the winter I bake low like Ann and hubby did or I do pork butts in crock pot. Yesterday we used apple hickory chips. HTH. That is why propane is nice, can just turn off. The woodchips are just as good as pellets or wood.

My hubby was given a smoker recently and we have done a few really great briskets. Before that I always baked them as you did or even boiled. Boiled is very tasty too and doesn’t take as many hours. Either way – yummy!

I’ve not cooked a brisket before and don’t know that I could wait for 6 hrs…. I was curious if you could do this recipe in a crock pot and if so, how long to cook and on high or low??? Thanks for the help…

Susan we have never done it in a crockpot… but thinking about it, I’m not sure how you could. The foil is causing a slow cook, but no water. If you put it in the crockpot, you would need to add water and that would change the meat texture (I think).
