Stockpile Recipe – Baking With Apples!

Hubby and I went on an apple run this morning. Now, I’ve posted apple recipes before including Apple Brown Betty and Crockpot Apples, but we now have a load so it is time to get baking!

The Apple Cheesecake Square recipe was given to me over 25 years ago for my (first) wedding via my shower. The other recipes I’ve picked up here and there over the years, and I have no idea of their origin.

Apple Cheesecake Squares

Crust

1/2 cup softened butter
1/3 cup sugar
1/4 tsp vanilla
1 cup flour

Blend together and pat onto the bottom of an ungreased 8″ x 8″ pan.

Filling

1 8oz package softened cream cheese
1/2 tsp vanilla
1 egg
1/3 cup sugar

Beat together and smooth over the top of crust

Topping

Slice two (2) large, peeled apples thinly and place evenly on top of cream cheese mixture.

Sprinkle a mixture of 1/3 cup sugar and 1/2 tsp cinnamon over apples.

Bake at 450º for 10 minutes, then reduce heat to 400º and bake an additional 25 minutes.

Cool and serve.

Recipe doubles nicely for a 13″ x 9″ pan.

Applesauce Cookies

375º
12 – 15 minutes

1 cup firmly packed brown sugar
2/3 cup softened butter
2 eggs
1 3/4 cups flour
1 1/2 tsp cinnamon
1/2 tsp nutmeg
1 cup applesauce
1 cup quick rolled oats
1 cup your choice: raisins, nuts or chocolate chips

Beat together brown sugar, butter and eggs until creamy.
Stir together flour, baking powder, cinnamon and nutmeg; add to the beaten mixture.
Add applesauce, oats and “your choice”.
Stir to combine.

Drop by 1/4 cupfuls onto greased cookie sheet.
Bake at 375º doe 12 – 15 minutes.
Cool on wire racks.

(Molded) Winter Apple Salad

1 package (small) lemon flavored gelatin
1 cup thinly sliced, unpeeled apples
1/2 cup chopped dates
1/2 cup chopped walnuts
2 Tbsp raisins
1/4 cup diced celery
2 Tbsp mayonnaise
1/2 cup whipping cream

Prepare gelatin according to packade directions.
Arrange several apple slices at the bottom of a 6 cup mold
Spoon in enough gelatin to hold the apple slices, chill until set
While that is chilling, chill remaining gelatin until syrupy
Combine apples, dates, nuts, raisins, celery and mayo.
Whip the whipping cream; add it to fruit mixture
Fold into syrupy gelatin; turn into mold with set apple.
Chill until set.
Unmold and serve around greens.

I see that you love apples…ME TOO!! I found this recipe for crock pot baked apples on crockpot-recipes.com in the dessert section. I think you can get to it from the main page though :) It’s delicious, you should try it!
