Well this was an easy choice because I made this the other day specifically to use up apples in my stockpile.
One of the great benefits to living in New York State is all the produce that can be purchased at a roadside stand or farmer’s market. NYS is mostly rural and produces a lot of apples; second only to Washington state. Many of these apples are grown up near Lake Ontario and hubby and I will take a drive up there several times during September and October when the produce really starts to be harvested. Last fall we purchased several bushels of apples. We made a lot of baked apples in the crock pot (I’ll list that recipe at the bottom). They were frozen and enjoyed throughout the winter and spring. I think there is one last container in the freezer to be enjoyed. The last of those apples are still in the bottom of the garage fridge and starting to wizen. The skins were difficult to peel, but the insides were firm and white and still tasted sooooo good!
So, I’ve been promising hubby a batch of Apple Brown Betty which I finally delivered on Saturday. This is really, really good… so good that I think there is only a serving or two left.
With that in mind, bake at your own risk.
Apple Brown Betty
375ΒΊ oven
45 minute bake time (I let it go an extra 5 minutes to bake off any water)
13″ x 9″ pan
6 c cored, peeled and sliced apples
2 Tbsp lemon juice
3/4 c firmly packed brown sugar
1/2 c flour
1/4 c quick rolled oats (I used 1/2c and substitute slow cook)
1 stick butter, softened
1 tsp cinnamon
Spray 13″ x 9″ with non-stick spray.
Spread peeled and slicked apples in the pan evenly. Sprinkle with lemon juice.
In a bow, combine brown sugar, flour, oats, cinnamon and butter, cut until pebble-like consistency.
When blended, sprinkle evenly over the top of the apples.
(At this point I cut up into small bits another 1/2 stick of butter and add it to the top of the mixture in small dabs.)
Bake for 45 minutes or until crisp.
Serve warm with vanilla ice cream or whipped cream on top.

Hubby got this recipe off the internet. When I made it I added more brown sugar. In case you can’t tell, I have a bit of a sweet-tooth.
Crock-pot Apples
Combine in crockpot:
6 cored, peeled and slicked apples
1/2 brown sugar
1 tsp cinnamon
4 Tbsp butter
1/2 c raisins
Add to this 1 c water
Cook on low 7-8 hours.
Yields 5-6 servings.
This is outstanding with vanilla ice cream. It tastes like you are eating apple ice cream!

I’m already smelling your kitchen! I love apples cooking. I will usually take the cores, bad spots and the skins if I peeled them and toss all into a pot on my stove with water and spices. I put the burner on a very low simmer and make my house smell awesome. I usually do this in the fall and winter. Can’t heat the house up right now! But I do have a small electric potpourri pot for use in the summer.
Sharinskishe that is a wonderful idea! I’ll have to try it come September.
