Make Your Own Apple Pie Filling

Hubby and I purchased a lot of apples this year. Looking for something to do with them, we decided to make Apple Pie Filling. We searched around online, and adapted and merged a few recipes to come up with this:

22 sliced apples
Lemon Juice
4 1/2 cups white sugar
1 cup cornstarch
2 tsp cinnamon
1/4 teaspoon ground nutmeg
9 cups water

Hubby purchased this apple peeler. I scoffed as I can peel apples quicker than he can peel one with this machine – until I saw that it cores and slices!!

• No matter how I tried, I could never get the slices that uniform, nor do all three functions as quickly.

• Place peeled and sliced apples into lemon water. This will prevent browning while you are peeling the rest of the apples.

In pot on stove combine:

• Sugar, cornstarch, cinnamon and nutmeg
• Slowly add water
• Stir well
• Allow mixture to thicken and come to a low boil
• Allow to boil 3-4 minutes

• Drain lemon water from apples
• Add apples to sugar mixture on stove
• Allow to come to a boil for 2 minutes
• Reduce heat, cover and allow to simmer for 10 minutes until apples soften

• Cool for 30 minutes, no longer than 90 minutes

• Portion out evenly into five containers, allowing 1/2″ headroom

Sometimes things do not go exactly as planned. We did not have any large freezer containers, so we used two soup containers for each pie.
This recipe makes a total of five (5) portions for 8″ pies.

Total cost:

22 apples (38¢# at the farm stand) $1.90
Sugar 25¢
Cornstarch 25¢
Cinnamon 10¢
Nutmeg 10¢
Let’s give the water and lemon juice a total of a quarter
= $2.85 to make the filling for five pies!

I’m more use to using one of these. Cost wise, how does Goya compare to Real Lemon? Hopefully, the pies go sale for the Holidays, since any large size national brand is priced at over five dollars.

I found the same exact apple peeler/slicer/corer at a yard sale this spring for $.50! It works like a charm and I’ll NEVER go back to the old fashioned way if I can help it. Well worth keeping an eye open for on of these things! I don’t have freezer space but would like to can some pie filling. Anyone know what the water bath processing time would be on this? Would it be the same as applesauce?

I just canned a bunch of applesauce and filling and the water bath time I used was about 20 minutes. My wrist tell me to get a peeler or wait until the kids are old enough!

If you don’t have room in your freezer (that’s me raising my hand), you can also preserve your pie filling in jars if you switch the cornstarch to Clear Jel which is a modified corn starch that withstands the high heat of canning.

Very jealous of the $.38/lb for apples. Around here the cheapest pick-your own are $.50 lb and thought it was a good deal until I read this!

MMmm…apples are really yummy dipped in cajeta too! Cajeta is like a super thick caramel and really easy to make! Boil a can of sweetened condensed milk for 6 hours. Don’t open the can or poke holes and make sure the water level stays at about halfway up the can if not more or it will explode. Flip the can over at the halfway point. The longer you boil it, the thicker and creamier it gets…so yummY!

My grandmother & I used to do this as a special treat when I was spending the night with her or just hanging around. We never let it go for 6 hours though… maybe 1 hour. Sure was yummy! And a great memory too! :)

I bought a book called Back to Basics, and they suggested to make your apple pie filling, place it wrapped in the pie plate, and then freeze it, and then pop it out and wrap it up extra well, and when you want to make the pie pop it in the pan with your crust. Thought that was really neat. Plus the recipe I have tastes just like the Mcdonald’s version, no lie!

‘FAMOUS APPLE PIE’

Ingredients:
-7 tart apples
-1 c white sugar
-1 1/2 tsp ground cinnamon
-2 tbsp all purpose flour
- 1/2 tsp ground nutmeg
-salt to taste
- 2 baked pie shells
- 1 tbsp butter

Directions
1. Preheat oven to 400 degrees F.
2. Cut the apples into 1/4 inch slices
3. In a large mixing bowl, combine sugar, cinnamon, flour, nutmeg, and salt; mix thoroughly. Pour the spice mix over the apples and stir until the apples are coated.
4. Line one crust in a 9 inch deep dish pie pan, place the apples in the pie crust. Dot the apple filling evenly with butter. Fit the top crust over the apples. Press the crust down gently and cut 3 or 4 slits in the top crust to allow steam to escape while the pie bakes.
5. Bake in the preheated oven for 50 min. or until the crust is golden brown. Check the pie after the 30 min of cooking; if the crust is already browned reduce the heat to 350 degrees F.

Now if only I can find the spice mixture to put on the crust too that would be awesome!

Do you know how many cups of apple pie filling go into one pie? Trying to divide equal amounts for freezing. Thank you for the recipe!!

LaRie hubby said each of those containers are 16oz, so two containers is 32 oz or 4 cups.
