Yesterday in the Do You Read Labels discussion (quite interesting BTW, read the comments for some true insight), I mentioned my MIL’s low salt dietary restriction and that hubby had found several low/no-salt bread recipes. If you ever read a manufacturer’s bread label, you will be shocked at how much of your daily sodium intake is consumed in two pieces of bread.
I asked hubby to send me the one she (and her caregivers) enjoy the most, so here it is. I have NO IDEA where he found it, but it was online somewhere.
“Faux” Sourdough
1 1/2 tsp Yeast
2 Cups Bread Flour (no sodium content)
1 TBSP Sugar
1/8 tsp Baking Soda
1/2 Cup Sour Cream (non-fat OK)
1 TBSP Vinegar
1/2 Cup Milk
All ingredients should be at room temperature before starting.
Now follow your bread machine’s instructions.

Didi it is a one pound loaf, so however thick you normally slice a 1# loaf of bread, this would be the same slice yield.

My mil has diabiates too and once my husband went to the doctor and heard the speech about salt he is on a major bandwagon. I am a saltaholic so it is very hard for me.
He now looks at labels all the time and tells me the percentage of sodium.
You know you can make almost any yeast bread without the sodium, as long as you are careful it doesn’t overrise. We have decided that if a yeast bread recipe calls for a tablespoon of sodium, we add a teaspoon, so about a 1/3 of whatever the recipe calls for. We have done one or two no added sodium, but found the flavor better with a hint of sodium.
